Apple Oat Muffins with Maple Drizzle

1 cup rolled oats

1 cup all-purpose flour (or use whole wheat flour for a healthier twist)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup brown sugar or coconut sugar

1/2 cup unsweetened applesauce

1/2 cup milk (dairy or any plant-based alternative)

1/4 cup vegetable oil or melted coconut oil

1 large egg

1 teaspoon vanilla extract

1 large apple, peeled, cored, and diced (Granny Smith or Honeycrisp recommended)

For the Maple Drizzle:

1/2 cup powdered sugar

2 tablespoons maple syrup

1–2 tablespoons milk (for desired consistency)

Preheat the Oven: Set your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing the cups with oil or cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, flour, baking powder, baking soda, salt, cinnamon, and brown sugar. Whisk together thoroughly to ensure even distribution of all ingredients.

      Combine Wet Ingredients: In another bowl, mix the applesauce, milk, vegetable oil (or melted coconut oil), egg, and vanilla extract. Whisk these ingredients together until you achieve a smooth mixture.

        Combine Mixtures: Gradually pour the wet mixture into the dry ingredients. Stir gently until just combined, being careful not to overmix, which could lead to dense muffins.

          Add Apples: Carefully fold in the diced apple until it is evenly distributed throughout the batter without mashing the pieces.

            Fill Muffin Tins: Spoon the batter into the muffin cups, filling each approximately 3/4 full to allow for rising.

              Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes. Check for doneness by inserting a toothpick into the center of a muffin; it should come out clean when they're done.
