Ingredients

4 medium-sized ripe peaches, sliced

1 cup shredded mozzarella cheese

1 cup crumbled goat cheese

6 large whole wheat tortillas

2 tablespoons honey

1 tablespoon fresh mint, chopped

1 teaspoon ground cinnamon

2 tablespoons olive oil

Pinch of salt

Optional: Greek yogurt for dipping

Instructions

Prepare the Peaches: In a medium bowl, combine the sliced peaches with honey, chopped mint, and a pinch of salt. Toss gently to ensure the peaches are evenly coated. Let the mixture sit for about 5 minutes to enhance and meld the flavors.

Mix the Cheeses: In a separate bowl, blend together the shredded mozzarella and crumbled goat cheese. This combination provides a creamy and tangy filling that complements the sweetness of the peaches.

Assemble the Quesadillas: Heat a large non-stick skillet over medium heat. Place a tortilla on the skillet and sprinkle half of it generously with the cheese mixture. Layer the cheese with a portion of the prepared peach mixture, then fold the tortilla in half, encasing the filling.

Cook: Cook the quesadilla for 2-3 minutes on one side, or until it is golden brown and the cheese begins to melt. Gently flip the quesadilla and cook for an additional 2-3 minutes on the other side, achieving a golden, crispy exterior.

Repeat: Once cooked, remove the quesadilla from the skillet and keep it warm. Repeat the assembly and cooking process with the remaining tortillas, cheese, and peach filling. If necessary, add a little olive oil to the skillet to prevent sticking.

Slice and Serve: After all the quesadillas are cooked, slice each one into wedges and sprinkle them lightly with ground cinnamon for an aromatic finish. Serve warm, accompanied by Greek yogurt for dipping if desired. These sweet and savory peach quesadillas make a delightful snack or a light lunch option!
