1 can (15 oz) black beans, drained and thoroughly rinsed

1 can (10 oz) diced tomatoes with green chilies (do not drain)

1 cup corn (can be fresh, frozen, or canned)

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

1 cup shredded cheddar cheese

Fresh cilantro, chopped, for garnish (optional)

Lime wedges, for serving (optional)

Preheat the Oven: Set your oven temperature to 375°F (190°C) so it’s ready when you're prepared to bake.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced bell peppers and onion. Cook for 5-7 minutes, stirring frequently, until the vegetables are tender and slightly caramelized.

      Cook the Chicken: Add the diced chicken to the skillet with the sautéed vegetables. Season the mixture with chili powder, cumin, paprika, garlic powder, onion powder, and a pinch of salt and pepper. Cook for 7-10 minutes, stirring occasionally, until the chicken is nicely browned and fully cooked through.
