2 large eggs, at room temperature

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour, sifted

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/4 teaspoon ground allspice (optional)

1/4 cup milk (dairy or non-dairy), at room temperature

Cinnamon sugar coating: 1/2 cup granulated sugar mixed with 1 tablespoon ground cinnamon
