2 tbsp extra virgin olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1/2 tsp red pepper flakes (optional for extra heat)

1 (28 oz) can crushed tomatoes

2 tsp dried basil

1 tsp dried oregano

Salt and freshly ground black pepper, to taste

1 cup whole milk ricotta cheese

1 cup fresh spinach, finely chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Cook the Pasta: Begin by preheating your oven to 375°F (190°C). In a large pot, bring salted water to a rolling boil. Add the ziti and cook according to the package instructions until al dente. Drain the pasta and set aside.

    Prepare the Sauce: In a large skillet, heat the extra virgin olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, or until it becomes translucent and fragrant. Stir in the minced garlic and red pepper flakes (if desired) and cook for an additional 1 minute, being careful not to let the garlic burn.

      Add Tomatoes and Herbs: Pour in the crushed tomatoes and sprinkle in the dried basil, oregano, salt, and pepper. Stir well and let the sauce simmer for about 10-15 minutes, allowing the flavors to combine and intensify. Taste and adjust the seasoning as needed.
