Ingredients

2 cans young green jackfruit in water (approximately 20 oz each), drained and rinsed

1 cup barbecue sauce (store-bought or homemade)

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

8 slider buns (mini hamburger buns)

½ cup coleslaw (optional, for topping)

Pickles (optional, for topping)

Instructions

Prepare the Jackfruit: Begin by shredding the green jackfruit. Carefully remove the core and any hard seeds, then use your fingers or a fork to separate the jackfruit into stringy pieces. Aim for a texture similar to that of pulled pork. Set the shredded jackfruit aside for later use.

Cook the Aromatics: In a large skillet, pour in the olive oil and heat it over medium heat. Add the finely chopped onion and sauté for about 5 minutes, until it becomes translucent and tender. Next, incorporate the minced garlic and continue to cook for an additional minute, allowing the garlic to release its fragrant aroma.

Add the Spices: Introduce the smoked paprika, ground cumin, and chili powder into the skillet. Season with salt and pepper to taste. Stir everything together well and allow the mixture to cook for another minute, toasting the spices and enhancing their flavors.

Combine Jackfruit with Sauce: Add the shredded jackfruit to the skillet, followed by the barbecue sauce. Mix thoroughly, ensuring that all the jackfruit pieces are coated in the sauce. Lower the heat to a gentle simmer and let it cook for 15-20 minutes, stirring occasionally, until the mixture is heated through and the flavors meld beautifully.

Prepare the Buns: While the jackfruit is simmering, take a separate skillet or your oven to lightly toast the slider buns. This step is optional but recommended for added texture and flavor.

Assemble the Sliders: Once the jackfruit mixture is ready, take a generous spoonful and place it onto the bottom half of each slider bun. For added freshness and crunch, top the jackfruit with a few spoonfuls of coleslaw and, if desired, a couple of pickles. Finally, cap each slider with the top half of the bun.

Serve: Arrange the assembled sliders on a serving platter and enjoy them warm. These sliders are perfect for gatherings, picnics, or a cozy meal at home!
