Ingredients

2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs, diced into bite-sized pieces

2 cups fresh broccoli florets, washed and trimmed

1 bell pepper, sliced into thin strips (any color for a vibrant look)

1 medium onion, diced finely

3 cloves garlic, minced

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon honey or maple syrup for sweetness

1 teaspoon grated fresh ginger for a hint of warmth

1 tablespoon cornstarch (optional, for a thicker sauce if desired)

Salt and freshly ground black pepper to taste

Sesame seeds, for garnish

Sliced green onions, for garnish

Instructions

Prepare Chicken Marinade: In a mixing bowl, combine the diced chicken thighs, soy sauce, sesame oil, honey (or maple syrup), minced garlic, and grated ginger. Mix well to ensure the chicken is evenly coated. Cover and let it marinate in the refrigerator for at least 30 minutes to allow the flavors to infuse.

Cook Broccoli: Bring a large pot of water to a boil. Once boiling, add the fresh broccoli florets and blanch for 2-3 minutes, or until the broccoli is bright green and tender-crisp. Drain the broccoli in a colander and set aside.

Stir-fry Chicken: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the marinated chicken to the skillet, ensuring it’s spread out in a single layer. Stir-fry the chicken for about 5-7 minutes until it is browned and cooked through. If the sauce appears too watery, sprinkle in the cornstarch and stir well to thicken it up.

Add Vegetables: Once the chicken is fully cooked, add the diced onion and sliced bell pepper to the skillet. Cook for another 3-4 minutes, stirring occasionally, until the vegetables have softened but still retain some crunch.

Combine Ingredients: Gently fold the blanched broccoli into the chicken and vegetable mixture in the skillet. Stir everything together to ensure even distribution, seasoning with salt and freshly ground black pepper to taste.

Assemble Bowls: In serving bowls, create a bed of jasmine rice as a base. Spoon the colorful broccoli chicken mixture generously on top of the rice in each bowl.

Garnish and Serve: Finish by sprinkling sesame seeds and sliced green onions over each bowl for an added crunch and visual appeal. Serve warm and enjoy your flavorful and colorful chicken rice bowls!
