Ingredients

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and finely chopped

1 cup cream cheese, softened to room temperature

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 clove garlic, minced

1 teaspoon freshly squeezed lemon juice

½ teaspoon red pepper flakes (optional for a kick)

Salt and freshly ground black pepper, to taste

4 large flour tortillas

2 tablespoons olive oil (for cooking)

Fresh parsley, chopped (for a vibrant garnish)

Instructions

In a medium mixing bowl, combine the softened cream cheese with the chopped spinach, chopped artichoke hearts, minced garlic, lemon juice, red pepper flakes (if using), shredded mozzarella, and grated Parmesan. Mix the ingredients thoroughly until well incorporated. Taste the filling and adjust with salt and fresh ground pepper as desired.

Preheat a non-stick skillet over medium heat and add 1 tablespoon of olive oil, allowing it to warm up for a minute.

Carefully place one tortilla in the skillet. Using a spatula, spread a generous portion of the cheesy spinach artichoke filling evenly across half of the tortilla.

Gently fold the tortilla over the filling, creating a semi-circle or half-moon shape.

Cook the folded tortilla for about 4-5 minutes, or until the bottom turns a delightful golden brown and crispy. With care, flip the tortilla using the spatula and cook for an additional 4-5 minutes on the other side, until it becomes golden and the cheese inside is thoroughly melted.

Once cooked, remove the tortilla from the skillet and allow it to rest for a minute on a cutting board. Slice into wedges for easy serving. Repeat the process with the remaining tortillas and filling, adding more olive oil to the skillet as needed for cooking.

Serve the tortilla melts warm, beautifully garnished with chopped fresh parsley for a pop of color. Enjoy your cheesy delight while it's hot!
