1 lb ground chicken

2 cups diced seedless watermelon

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon fresh ginger, minced

2 cloves garlic, minced

1 small red bell pepper, finely chopped

2 green onions, chopped

1/4 cup fresh cilantro, chopped

1 head of butter or iceberg lettuce (for wrapping)

Salt and pepper, to taste

Optional: crushed peanuts for garnish

Prepare the Watermelon Glaze: Begin by pureeing the diced watermelon in a blender until smooth. Use a fine mesh sieve to strain the puree, removing any excess pulp—aim for approximately 1 cup of pure watermelon juice.

    Make the Glaze: In a small saucepan set over medium heat, combine the watermelon juice, soy sauce, hoisin sauce, rice vinegar, and sesame oil. Allow the mixture to simmer, stirring occasionally, until it reduces and thickens into a syrupy consistency (about 5-7 minutes). Remove from heat and set aside.

      Cook the Chicken: Heat a large skillet over medium-high heat. Add the ground chicken to the pan, breaking it apart with a spatula as it cooks. Continue cooking until the chicken starts to brown (about 5 minutes).
