4 boneless, skinless chicken breasts

1 cup green olives, pitted and finely chopped

1/2 cup black olives, pitted and finely chopped

2 tablespoons capers, rinsed and drained

2 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

1 tablespoon freshly squeezed lemon juice

1 teaspoon fresh thyme leaves

3 tablespoons olive oil, divided

Salt and freshly ground black pepper, to taste

Prepare the Tapenade: In a mixing bowl, thoroughly combine the finely chopped green olives, black olives, capers, minced garlic, chopped parsley, lemon juice, and thyme leaves. Gradually add 2 tablespoons of olive oil and mix until well blended. Adjust the seasoning with salt and freshly ground black pepper to taste. Set the mixture aside to allow the flavors to meld together.
