1 teaspoon onion powder

½ teaspoon ground cumin

½ teaspoon salt

½ teaspoon black pepper

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

Marinate the Chicken: In a large mixing bowl, combine the olive oil, lime juice, lime zest, honey, chili powder, smoked paprika, garlic powder, onion powder, ground cumin, salt, and black pepper. Whisk together until everything is thoroughly blended. Add the cubed chicken thighs and stir well to ensure all pieces are evenly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, allowing the flavors to infuse (you can marinate up to 2 hours for a more intense flavor).

    Prepare the Vegetables: While the chicken is marinating, prepare the vegetables. Cut the red bell pepper, yellow bell pepper, and red onion into 1-inch pieces and set aside. Keep them separated for easy skewering.
