Chili Mac and Cheese Bombs

2 cups elbow macaroni

1 can (15 oz) chili (choose with or without beans based on preference)

2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup cream cheese, softened to room temperature

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

1 package (16 oz) refrigerated biscuit dough

Cooking oil spray

Optional: sliced jalapeños for added heat

Cook the Macaroni: In a large pot, bring water with a generous pinch of salt to a roaring boil. Add the elbow macaroni and cook according to the package directions until al dente. Once done, drain the macaroni thoroughly and set aside to cool slightly.

    Prepare the Chili Mixture: In a spacious mixing bowl, combine the cooled macaroni with the chili, sharp cheddar cheese, Monterey Jack cheese, softened cream cheese, garlic powder, onion powder, paprika, cumin, salt, and black pepper. Use a spatula or spoon to mix all the ingredients together until they form a cohesive filling. Ensure the cream cheese is fully integrated for a creamy texture.

      Preheat the Oven: Set your oven to preheat at 375°F (190°C). To make cleanup easier, line a large baking sheet with parchment paper.

        Assemble the Bombs: On a clean, flat surface, separate the biscuit dough into individual portions. Gently flatten each biscuit into a circle approximately 4-5 inches in diameter. Place a heaping tablespoon of the chili mac and cheese mixture in the center of each biscuit.

          Seal the Bombs: Carefully fold the edges of the biscuit circle over the filling, pinching the seams tightly to ensure the filling is completely encased. Place the bombs seam-side down on the lined baking sheet, evenly spaced to allow for rising.

            Bake: Lightly spray the tops of the biscuit bombs with cooking oil for a golden finish. Bake in the preheated oven for 15-18 minutes, or until they are beautifully puffed and golden brown.

              Cool and Serve: Remove the baked bombs from the oven and allow them to cool for about 5 minutes. Serve warm, garnished with optional sliced jalapeños for a spicy kick, and a side of ranch dressing or hot sauce for dipping.
