1 can (15 oz) chickpeas, drained and rinsed

1 ripe avocado, diced into bite-sized pieces

1 cup cherry tomatoes, halved

½ red onion, finely chopped

1 cucumber, diced into small cubes

¼ cup fresh cilantro or parsley, finely chopped

2 tablespoons extra virgin olive oil

1 tablespoon freshly squeezed lemon juice

1 teaspoon ground cumin

Salt and pepper, to taste

Optional: crumbled feta cheese for garnish

Instructions
 

In a large mixing bowl, combine the rinsed chickpeas, diced avocado, halved cherry tomatoes, finely chopped red onion, diced cucumber, and freshly chopped cilantro or parsley. Stir gently to mix without mashing the avocado.

    In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, ground cumin, and a generous pinch of salt and pepper until the dressing is smooth and well combined.

      Drizzle the prepared dressing over the chickpea and vegetable mixture in the large bowl.

        Carefully toss the salad with a spatula or large spoon to ensure all ingredients are evenly coated with the dressing, being cautious not to break up the avocado too much.

          Allow the salad to sit at room temperature for 10-15 minutes, which helps the flavors develop and meld together beautifully.
