4 cups fresh baby spinach, thoroughly washed and dried

1 can (14 oz) artichoke hearts, drained and coarsely chopped

1 cup cherry tomatoes, halved

1/2 cup red onion, finely diced

1/2 cup cucumber, peeled and diced

1/2 cup feta cheese, crumbled

1/4 cup black olives, pitted and sliced

1/4 cup fresh parsley, finely chopped

1/4 cup extra virgin olive oil

2 tablespoons freshly squeezed lemon juice

1 teaspoon Dijon mustard

Salt and freshly ground black pepper, to taste

Prepare the Dressing: In a small mixing bowl, combine the extra virgin olive oil, freshly squeezed lemon juice, Dijon mustard, and a pinch of salt and pepper. Whisk thoroughly until the dressing is smooth and emulsified. Set aside to let the flavors develop.

    Combine the Salad Ingredients: In a large mixing bowl, carefully add the washed baby spinach, chopped artichoke hearts, halved cherry tomatoes, finely diced red onion, diced cucumber, crumbled feta cheese, sliced black olives, and chopped fresh parsley. Toss gently to mix the ingredients evenly.
