Ingredients

1 lb (450g) potato gnocchi (store-bought or homemade)

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1 cup grated Parmesan cheese, plus extra for topping

1 cup shredded mozzarella cheese

1 teaspoon dried Italian herbs (or mixed herbs)

1/2 teaspoon red pepper flakes (optional, for a kick)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it’s hot and ready for baking.

Cook the Gnocchi: In a large pot, bring salted water to a boil. Add the gnocchi and cook according to package instructions, usually until they float to the surface (about 2-3 minutes). Once cooked, carefully drain the gnocchi and set aside.

Prepare the Sauce: In a large skillet over medium heat, pour in the olive oil. Allow it to heat up, then add the minced garlic. Sauté for about 1 minute until the garlic is fragrant, taking care not to burn it.

Create the Creamy Base: Gradually whisk in the heavy cream and vegetable broth, stirring well to combine. Bring the mixture to a gentle simmer, allowing the flavors to meld.

Add Cheese and Seasoning: Stir in the grated Parmesan cheese gradually, mixing until it melts and forms a luscious creamy sauce. Sprinkle in the dried Italian herbs, red pepper flakes (if you prefer a bit of heat), and season generously with salt and black pepper to taste.

Combine Gnocchi and Sauce: Gently fold the cooked gnocchi into the creamy garlic sauce, ensuring each piece is thoroughly coated with the rich mixture.

Transfer to Baking Dish: Pour the gnocchi and sauce mixture into a greased baking dish, spreading it out evenly. Top the dish generously with shredded mozzarella cheese along with a sprinkle of extra grated Parmesan to create a deliciously golden crust.

Bake: Place the baking dish in the preheated oven and bake for approximately 20-25 minutes, or until the cheese is bubbling and golden brown.

Garnish and Serve: After baking, let the dish cool for a few minutes. Before serving, garnish with freshly chopped parsley for a pop of color and freshness.

Enjoy this creamy and indulgent dish as a comforting dinner option or a crowd-pleasing side at your next gathering!
