Ingredients

12 oz penne pasta

2 tablespoons extra virgin olive oil

6 cloves garlic, finely minced

7 oz fresh baby spinach

1 cup heavy cream

3/4 cup freshly grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional for heat)

Salt and freshly ground black pepper, to taste

1 tablespoon freshly squeezed lemon juice

Fresh basil leaves, for garnish

Additional Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package instructions, typically around 11-13 minutes, until al dente. Before draining, reserve 1/2 cup of the pasta cooking water, then drain the pasta and set it aside.

Sauté Garlic: In a large, deep skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until it becomes fragrant but not browned—watch closely to avoid burning.

Add Spinach: Gradually incorporate the fresh baby spinach into the skillet, stirring continuously for about 2-3 minutes, or until wilted. Season with a pinch of salt, freshly ground black pepper, and the red pepper flakes, if desired, to enhance the flavors.

Create the Cream Sauce: Reduce the heat to low, then carefully pour the heavy cream into the skillet with the sautéed garlic and spinach. Stir continuously for roughly 3-4 minutes, allowing the sauce to simmer and thicken slightly.

Incorporate Cheese: Remove the skillet from the heat and add the grated Parmesan cheese to the cream sauce. Stir until the cheese is fully melted and the sauce becomes smooth and creamy. If the sauce is too thick, slowly add some of the reserved pasta water until you achieve your preferred consistency.

Combine Pasta and Sauce: Add the drained penne pasta back into the skillet, using tongs to gently toss the pasta in the creamy garlic sauce, ensuring it is well coated. Allow it to heat through for an additional minute.

Finish with Lemon: Stir in the freshly squeezed lemon juice, tasting and adjusting the seasoning with more salt and black pepper as necessary. Mix thoroughly to ensure all ingredients are fully combined.

Serve: Plate generous portions of the creamy garlic spinach penne. Garnish with fresh basil leaves for a bright touch and sprinkle with additional grated Parmesan cheese for extra flavor.
