300g spaghetti or your choice of pasta

200g ricotta cheese

Zest and juice of 1 large lemon

2 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

1 cup cherry tomatoes, halved

1/2 cup freshly grated Parmesan cheese

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Toasted pine nuts, for garnish (optional but recommended)

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the starchy pasta water, then drain the pasta and set it aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 1 minute until fragrant and lightly golden – be careful not to let it brown, as this will affect the flavor.
