Ingredients

12 oz refrigerated cheese tortellini

1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1/2 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional for added spice)

Salt and freshly ground black pepper to taste

Fresh basil leaves, chopped or whole for garnish

Instructions

Cook the Tortellini: In a large pot, bring salted water to a rolling boil. Carefully add the cheese tortellini and cook according to package instructions until they are al dente, usually about 3-5 minutes. Once cooked, drain the tortellini thoroughly and set aside.

Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once the oil is shimmering, add the diced chicken and season with a sprinkle of salt and pepper. Cook the chicken for 5-7 minutes, stirring occasionally, until it is browned and cooked all the way through (no longer pink in the center).

Add Garlic: When the chicken is almost cooked, add the minced garlic to the skillet. Sauté for an additional 30 seconds, stirring frequently, until the garlic becomes fragrant. Be careful not to let it burn, as burnt garlic can taste bitter.

Create the Sauce: Lower the heat to medium-low and slowly pour in the heavy cream. Stir continuously for about 2-3 minutes, allowing the cream to thicken slightly, creating a rich base for your sauce.

Mix in Pesto and Cheese: Add the basil pesto and grated Parmesan cheese to the skillet. Stir them in thoroughly until the sauce reaches a creamy consistency. If you like a bit of heat, sprinkle in the red pepper flakes and mix well.

Combine Tortellini & Sauce: Gently fold the cooked tortellini into the sauce, ensuring each piece is well-coated. Allow the tortillas to heat through in the sauce for an additional 1-2 minutes.

Serve: Remove the skillet from the heat. Garnish with freshly chopped basil leaves or whole leaves for visual appeal. Serve the creamy pesto chicken tortellini immediately on plates, allowing everyone to enjoy this comforting dish.
