Creamy Pumpkin Soup

4 cups pumpkin puree (freshly made or canned)

4 cups vegetable broth or chicken broth

1 cup coconut milk (or substitute with heavy cream)

Salt and freshly ground black pepper to taste

Fresh parsley or chives for garnish (optional)

Toasted pumpkin seeds for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and cook for about 5-7 minutes, stirring occasionally, until the onion becomes translucent. Add the minced garlic and cook for another minute, stirring constantly, until fragrant.

    Spice it Up: Sprinkle in the ground cumin, ground ginger, and ground nutmeg. Stir well to coat the onions and garlic with the spices. Cook for an additional 1-2 minutes, allowing the spices to release their flavors.

      Add Pumpkin: Gently incorporate the pumpkin puree into the pot, mixing it thoroughly with the sautéed onions and spices. Allow the mixture to cook for about 3-4 minutes, stirring occasionally to prevent sticking.

        Pour in the Broth: Gradually pour in the vegetable or chicken broth while stirring to combine all ingredients smoothly. Increase the heat slightly to bring the soup to a gentle simmer. Let it cook uncovered for 15-20 minutes, allowing the flavors to meld beautifully.

          Blend for Creaminess: Remove the pot from the heat. Using an immersion blender, puree the soup until it reaches a velvety smooth consistency. (If you prefer, you can carefully transfer the soup in batches to a countertop blender and blend until smooth.)
