12 oz (340g) pasta (choose penne or fettuccine)

2 tablespoons olive oil

1 lb (450g) boneless chicken breast, diced into bite-sized pieces

4 cloves garlic, finely minced

1 cup sun-dried tomatoes, chopped (preferably packed in oil for enhanced flavor)

1 cup heavy cream

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Optional: Red pepper flakes, for a spicy kick

Cook the Pasta: In a large pot, bring water to a rolling boil. Add a hearty pinch of salt to the water, then carefully add the pasta. Cook according to the package instructions until al dente, usually about 8-10 minutes. Before draining, reserve ½ cup of the starchy pasta water, then drain and set the pasta aside.

    Sauté the Chicken: In a large skillet over medium heat, pour in the olive oil. Once the oil shimmers, add the diced chicken breast. Season it generously with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and no longer pink inside. Transfer the cooked chicken to a plate and set aside.

      Prepare the Sauce: In the same skillet, add a little more olive oil if necessary. Lower the heat slightly and add the minced garlic, sautéing for about 1 minute or until it becomes fragrant. Introduce the chopped sun-dried tomatoes to the skillet and sauté for an additional 2 minutes to mingle the flavors.

        Create the Creamy Mixture: Reduce the heat to low, then pour in the heavy cream along with the Italian seasoning. Stir well to combine, allowing the mixture to simmer gently for about 2-3 minutes. If you find the sauce too thick, gradually incorporate some of the reserved pasta water until you achieve your desired consistency.

          Combine Chicken and Pasta: Return the cooked chicken to the skillet with the creamy sauce, then add the drained pasta. Using tongs or a spatula, gently toss everything together until the pasta is thoroughly coated with the rich sauce.

            Add Cheese: Gradually stir in the grated Parmesan cheese until it melts and becomes evenly mixed in. Taste the sauce and season further with salt, pepper, or a pinch of red pepper flakes for added heat if you prefer.
