1 cup orzo pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breast, cut into bite-sized pieces

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 ounces) diced tomatoes, with their juices

2 cups chicken broth

1 cup heavy cream

1 teaspoon dried basil

1 cup fresh basil leaves, chopped

Salt and pepper to taste

½ cup grated Parmesan cheese

Optional: Fresh basil leaves for garnish

Cook the Orzo: Bring a large pot of salted water to a rolling boil. Add the orzo pasta and cook according to package instructions until it's al dente. Once cooked, drain the orzo and set it aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the bite-sized chicken pieces, generously season them with salt and pepper, and cook for approximately 5-7 minutes. You want the chicken to be golden brown and fully cooked. Once done, transfer the chicken to a plate and set it aside for later.

      Sauté the Vegetables: In the same skillet, add the finely chopped onion. Sauté for about 3-4 minutes or until the onion turns translucent. Then, add the minced garlic and continue to cook for an additional minute until the garlic is aromatic.

        Add Tomatoes and Broth: Pour in the diced tomatoes along with their juices and the chicken broth into the skillet. Stir well and bring the mixture to a boil.

          Make it Creamy: Reduce the heat to low and gently stir in the heavy cream, dried basil, and freshly chopped basil. Allow the mixture to simmer for 5 minutes, letting the flavors beautifully meld together.

            Combine Everything: Return the sautéed chicken to the skillet, along with the drained orzo. Stir everything together until well combined and simmer for another 2-3 minutes. If the sauce seems too thick for your liking, feel free to add a little more chicken broth until you reach your desired consistency.
