12 oz (340g) fettuccine or spaghetti

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 can (15 oz) diced tomatoes, with their juices

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to your spice preference)

Salt and freshly ground black pepper, to taste

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup fresh basil leaves, roughly chopped

Extra fresh basil and additional grated Parmesan for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine (or spaghetti) and cook according to package instructions until al dente. Once cooked, drain the pasta, reserving a little pasta water if needed, and set aside.

    Prepare the Sauce: In a large skillet set over medium heat, pour in the olive oil. When the oil is shimmering, add the minced garlic and sauté for about 1 minute, just until it becomes fragrant but not browned.

      Add Tomatoes and Seasoning: Pour in the diced tomatoes along with their juices, then sprinkle in the oregano, red pepper flakes, and a generous pinch of salt and pepper. Mix everything well and allow it to simmer for about 5 minutes, which will let the flavors combine beautifully.
