2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1 medium red onion, thinly sliced

1 small green bell pepper, thinly sliced

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Jalapeño slices (optional, for added heat)

Prepare the Chicken Filling: In a large mixing bowl, combine the shredded chicken with the BBQ sauce. Stir well until the chicken pieces are thoroughly coated in the sauce. Set aside to allow the flavors to meld.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil and let it heat up. Once hot, add the sliced red onion and green bell pepper. Sauté for approximately 5-7 minutes, stirring occasionally, until the vegetables are tender and lightly caramelized. Season with salt and pepper to taste. Remove from the skillet and transfer to a plate.

      Assemble the Quesadillas: On a clean, flat surface, lay out one flour tortilla. On one half of the tortilla, add about 1/2 cup of the BBQ chicken mixture. Top this with a mix of about 1/2 cup of cheddar and mozzarella cheese, followed by a portion of the sautéed vegetables. Fold the tortilla over to form a half-moon shape. Repeat the assembly process for the remaining tortillas.

        Cook the Quesadillas: Wipe out the skillet used for the vegetables to remove any residue, then return it to medium heat. Lightly grease the skillet with a drizzle of olive oil. Carefully place one assembled quesadilla into the skillet and cook for 3-4 minutes on one side, until it's golden brown and crispy. Gently flip the quesadilla and cook for an additional 3-4 minutes on the other side, adding more oil if needed to ensure crispiness.

          Finish Cooking: Once both sides of the quesadilla are golden and the cheese is melted, remove it from the skillet and allow it to cool for about a minute. Repeat the cooking process with the remaining quesadillas, adding oil to the skillet as necessary.

            Slice and Serve: Using a sharp knife, cut each quesadilla into wedges and arrange them neatly on a serving plate. Garnish with freshly chopped cilantro and serve alongside sour cream for dipping. Add jalapeño slices if you like a bit of extra heat.
