Ingredients

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 medium onion, sliced into thin wedges

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

4 large flour tortillas (10-inch size)

1 cup shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for dipping)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Chicken and Vegetables: In a spacious mixing bowl, combine the thinly sliced chicken, red bell pepper strips, green bell pepper strips, and onion wedges. Drizzle the olive oil over the mixture. Then, add the chili powder, ground cumin, smoked paprika, garlic powder, onion powder, along with salt and pepper to taste. Use a wooden spoon or your hands to toss everything together until all ingredients are evenly coated in spices and oil.

Bake the Chicken Mixture: Transfer the chicken and vegetable mixture to the prepared baking sheet, spreading it evenly across the surface. Bake in your preheated oven for 20-25 minutes, until the chicken is fully cooked (internal temperature should reach 165°F/74°C) and the vegetables are tender. Remember to stir the mixture halfway through cooking for more even roasting.

Warm the Tortillas: While the chicken and vegetables bake, take your tortillas and wrap them in aluminum foil. Place them in the oven during the last 5 minutes of baking to warm and soften them.

Assemble the Wraps: Once the chicken and vegetables are cooked, carefully remove the baking sheet from the oven. Take a warm tortilla and lay it flat on a clean surface. Spoon a generous amount of the flavorful chicken and vegetable mixture into the center of the tortilla, followed by a generous sprinkle of shredded cheese.

Wrap It Up: Fold the sides of the tortilla inwards and then carefully roll it from the bottom up, ensuring a tight wrap. Repeat this process for the remaining tortillas and filling.

Crisp the Wraps: Place the wrapped fajitas seam-side down on a clean baking sheet. Return them to the oven and bake for an additional 10-12 minutes, or until the tortillas become crispy and golden brown.

Serve: Once baked, remove the wraps from the oven and let them cool slightly for about a minute. Slice each wrap in half, garnish with fresh chopped cilantro, and serve with sides of sour cream and salsa for dipping.

                  Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 4

                    - Presentation Tips: For a vibrant presentation, stack the halved wraps on a wooden board or a colorful plate. Place small bowls of sour cream and salsa alongside for easy access, and sprinkle additional cilantro on top for an inviting garnish.
