4 large whole grain or spinach tortillas

1 cup shredded carrots

1 cup mixed bell peppers, thinly sliced

1 cup zucchini, julienned

1 cup red cabbage, shredded

1 cup canned black beans, rinsed and drained

1/2 cup corn kernels (fresh or frozen)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1/2 cup Greek yogurt or plant-based yogurt (for serving)

Fresh lime juice (for drizzling)

Olive oil spray

Prepare the Vegetables: In a large mixing bowl, combine the shredded carrots, sliced bell peppers, julienned zucchini, shredded red cabbage, black beans, and corn kernels. Gently toss the mixture until all vegetables are well integrated.

    Season the Filling: Sprinkle the cumin, smoked paprika, garlic powder, onion powder, and a generous pinch of salt and pepper over the veggie mixture. Stir well to ensure that all the vegetables are evenly coated with the spices.

      Assemble the Wraps: Place a tortilla flat on a clean work surface. Spoon a generous portion of the seasoned vegetable mixture into the center of the tortilla. Fold the sides inward, then roll from the bottom up tightly to secure the filling. Repeat this process with the remaining tortillas and filling.

        Preheat the Air Fryer: Set your air fryer to preheat at 375°F (190°C) for approximately 5 minutes to ensure it's hot before adding the wraps.
