This dish has become a staple in my home, showcasing the magic that happens when tender gnocchi meets rich marinara sauce and gooey cheese. Easy Cheesy Baked Gnocchi

Ingredients
  

1 lb (450g) potato gnocchi

2 cups marinara sauce (store-bought or homemade)

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup fresh spinach, roughly chopped

2 cloves garlic, minced

1 cup ricotta cheese

1 tsp dried Italian herbs (a blend of oregano, basil, and thyme)

Salt and pepper to taste

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C). This will ensure it's hot enough to melt and crisp the cheese beautifully.

    In a large pot, bring water to a rolling boil and add a generous pinch of salt. Cook the potato gnocchi according to the package instructions. They are done when they float to the surface, which typically takes about 2-3 minutes. Once cooked, drain them well and set aside.

      In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for about 1 minute, stirring frequently until the garlic is fragrant but not browned to avoid bitterness.

        Add the roughly chopped spinach to the skillet, and cook until it’s wilted and tender, which should take an additional 2-3 minutes. Season this mixture with salt, pepper, and the dried Italian herbs for a burst of flavor.

          In a large mixing bowl, gently combine the cooked gnocchi with the sautéed spinach mixture, marinara sauce, and ricotta cheese. Carefully mix until the gnocchi are evenly coated in the sauce without breaking them.

            Transfer the gnocchi and sauce mixture into a greased 9x13 inch (23x33 cm) baking dish, spreading it out evenly across the dish.

              Evenly sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the top of the gnocchi mixture. This will create a deliciously cheesy crust as it bakes.

                Bake the dish in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbling, and golden in color. Keep an eye on it for the perfect golden finish.

                  Once baked, remove the dish from the oven and let it cool for a few minutes to set. Garnish with fresh basil leaves before serving for a touch of color and freshness.
