Ingredients

2 cups rolled oats

1 cup creamy peanut butter

1/2 cup honey or maple syrup

1/2 cup dark chocolate chips (plus extra for drizzling)

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup chopped nuts (optional: almonds or pecans)

1/4 cup shredded coconut (optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the rolled oats, creamy peanut butter, honey or maple syrup, salt, and vanilla extract. Use a spatula or a wooden spoon to stir until all ingredients are thoroughly incorporated, resulting in a sticky and cohesive mixture.

Incorporate Optional Mix-Ins: If desired, fold in the chopped nuts and shredded coconut into the oat mixture. These optional ingredients add delightful texture and additional flavor to your bars.

Line the Pan: Line an 8x8 inch baking dish with parchment paper, ensuring that there is some overhang on the sides. This will assist in easy removal of the bars once they are set.

Spread the Mixture: Gently pour the oat mixture into the prepared baking dish. Using the back of a spatula or your clean hands, press the mixture down firmly and evenly into all corners and edges to create a compact base.

Melt the Chocolate: In a microwave-safe bowl, add the dark chocolate chips. Microwave the chocolate in 30-second intervals, stirring between each interval, until the chocolate is fully melted and has a smooth consistency, which should take about 1-2 minutes total.

Drizzle the Chocolate: Carefully pour the melted chocolate over the pressed oat mixture in the baking dish, using a spatula to spread it evenly over the surface. If you wish to create a decorative effect, reserve a small amount of melted chocolate for drizzling on top later.

Freeze: Place the baking dish in the freezer and allow the mixture to set for at least 2 hours, or until firm to the touch.

Cut the Bars: Once the mixture is set, remove the dish from the freezer using the overhanging parchment paper. Transfer it onto a cutting board and slice it into bars or squares of your preferred size.

Add Extra Chocolate Drizzle (Optional): If you reserved some melted chocolate, drizzle it over the cut bars for an extra touch of indulgence.

Store: Place the individual bars in an airtight container and store them in the freezer. These delicious treats are perfect to enjoy straight from the freezer, providing a refreshing snack whenever you desire!
