Ingredients
  

2 ripe mangos, peeled and diced

1 cup full-fat coconut milk (for a creamier texture)

1/4 cup honey or maple syrup (adjust based on your sweetness preference)

1 tablespoon fresh lime juice

1 teaspoon pure vanilla extract

1/2 cup shredded coconut (choose unsweetened or sweetened based on preference)

Optional: Fresh mint leaves for garnish

Instructions
 

Prepare the Mango Puree:

    - In a blender, combine the diced mangos, 1/2 cup of the coconut milk, honey or maple syrup, fresh lime juice, and vanilla extract.

      - Blend on high speed until the mixture is smooth and creamy.

        - Taste the blended puree and adjust the sweetness with more honey or syrup if desired.

          Combine Coconut Mixture:

            - In a separate mixing bowl, pour in the remaining coconut milk and add the shredded coconut.

              - Stir the mixture well to ensure the shredded coconut is evenly incorporated. This will add a delightful chewy texture to your pops.

                Layer the Pops:

                  - Take your popsicle molds and pour a generous layer of the mango puree into each mold, filling them about halfway.

                    - Gently tap the molds on the counter to release any trapped air bubbles, ensuring a smooth layer.

                      Add the Coconut Layer:
