Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened to room temperature

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh or frozen raspberries (if using frozen, ensure they are thawed)

2 tablespoons fresh lemon juice

1/4 teaspoon salt

1/2 cup dark chocolate (optional, for drizzling)

Instructions

Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs with the melted butter. Stir well until the crumbs are fully coated and the mixture resembles damp sand.

Press the Crust: Line a mini muffin tin with paper liners. Using a tablespoon measure, evenly distribute the graham cracker mixture into each muffin cup. Press down firmly with the back of the spoon to create a compact, even layer at the bottom of each cup.

Make the Filling: In a large mixing bowl, beat together the softened cream cheese, powdered sugar, vanilla extract, lemon juice, and salt. Use an electric mixer on medium speed until the mixture is smooth and creamy with no lumps remaining.

Add Raspberries: Carefully fold the raspberries into the cream cheese mixture using a spatula, ensuring you preserve the integrity of the berries for a lovely marbled effect. Take care not to overmix.

Fill the Crusts: Spoon the creamy raspberry filling over the prepared graham cracker crusts, filling each cup to the brim with the colorful mixture.

Freeze: Place the filled muffin tin in the freezer. Allow the cheesecake bites to freeze for a minimum of 3 hours, or until completely solid.

Drizzle with Chocolate (Optional): If you choose to add a chocolate drizzle, melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, or use a double boiler until smooth and melted. Drizzle the melted chocolate over the frozen cheesecake bites just before serving for an elegant touch.

Serve: Let the cheesecake bites sit at room temperature for about 5 minutes to soften slightly. Carefully remove them from the muffin tin and enjoy these refreshing, delightful frozen treats!
