For a seedless texture, strain the puree through a fine mesh sieve, using a spoon to push the liquid through. Set the smooth raspberry puree aside.

    Make the Lemonade Base: In a medium mixing bowl, whisk together the freshly squeezed lemon juice, the remaining honey/agave syrup, and a pinch of salt. Stir until the sweetener is completely dissolved and the mixture is well blended.

      Combine Cream Mixture: In another mixing bowl, use a whisk or electric mixer to blend the chilled coconut cream, plain Greek yogurt, and vanilla extract together. Whisk until the mixture achieves a smooth and creamy consistency, ensuring there are no lumps.

        Layer the Ingredients: Prepare a silicone coin mold with approximately 2-inch diameters. Start by adding a spoonful of the raspberry puree to the bottom of each mold compartment.
