Ingredients

2 ripe mangoes, peeled and diced

1 cup coconut yogurt (or Greek yogurt for a tangy flavor)

1/4 cup honey or maple syrup (adjust according to sweetness preference)

1 tsp vanilla extract

1 cup unsweetened shredded coconut

1 tbsp fresh lime juice

A pinch of salt

Instructions

Prepare the Mango Puree: In a high-speed blender, combine the diced mangoes, fresh lime juice, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend the mixture until it reaches a smooth and creamy consistency. Set this luscious puree aside for layering.

Mix the Yogurt Base: In a large mixing bowl, combine the coconut yogurt with half of the prepared mango puree. Stir gently but thoroughly until the two are completely blended and creamy.

Layer the Slices: Line a 9x5-inch loaf pan with parchment paper, making sure it extends beyond the edges for easy removal later. Begin by spreading a generous layer of the yogurt mixture evenly across the bottom of the pan, smoothing it down for an even surface.

Add Mango Puree: Pour half of the remaining mango puree over the yogurt layer, using a spatula to distribute it evenly. Sprinkle a layer of shredded coconut generously on top for added texture.

Repeat Layers: Next, add another layer of the yogurt mixture followed by the rest of the mango puree. Finish with a final sprinkling of shredded coconut for a delightful topping. For a creative touch, use a toothpick or skewer to gently swirl the top layers together for a marbled effect.

Freeze: Cover the loaf pan tightly with plastic wrap and place it in the freezer for at least 4 to 6 hours, or until the mixture is completely set and firm to the touch.

Slice and Serve: Once frozen solid, lift the yogurt bars from the loaf pan using the overhanging parchment paper. Place the block on a cutting board and slice it into 'ice cream bar' sized pieces. Serve immediately or store the slices in an airtight container for delicious treats later on.

Optional Garnish: For an extra touch of tropical delight, drizzle additional honey over the slices or top with fresh mango slices when serving.
