Ingredients

4 large flour tortillas

1 cup cream cheese, softened to room temperature

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup mixed fresh fruits, diced (such as strawberries, blueberries, kiwi, and bananas)

1/2 cup granola

1/4 cup chocolate syrup (for drizzling)

Fresh mint leaves (for garnish)

Cooking spray or 1 tablespoon unsalted butter (for grilling)

Instructions

Make the Cream Cheese Filling: In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using a hand mixer or whisk, blend the ingredients together until the mixture is smooth and creamy, ensuring there are no lumps.

Prepare the Quesadillas: Lay one tortilla flat on a clean surface or board. With a spatula or the back of a spoon, spread about 1/4 of the cream cheese mixture evenly across the tortilla, leaving a small border at the edges. On one half of the tortilla, sprinkle 1/4 of the diced fresh fruits and 2 tablespoons of granola evenly over the cream cheese mixture.

Complete the Quesadilla: Carefully fold the tortilla in half over the filling to create a half-moon shape. Press down gently to seal the edges. Repeat steps 2 and 3 for the remaining tortillas, creating additional quesadillas.

Grill the Quesadillas: Preheat a non-stick skillet over medium heat. Lightly coat the skillet with cooking spray or melt the butter in it. Once hot, add the first quesadilla and cook for 2-3 minutes on one side until it turns golden brown and crispy. Using a spatula, carefully flip the quesadilla and cook the other side for an additional 2-3 minutes until it is golden and heated through. Transfer the cooked quesadilla to a plate and keep warm. Repeat this process with the remaining quesadillas.

Serve and Enjoy: Once all quesadillas are cooked, slice each one into wedges. Drizzle chocolate syrup generously over the top, and garnish with fresh mint leaves for a pop of color and freshness. Serve warm and enjoy this delightful fruity treat!
