Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon onion powder

½ teaspoon dried thyme

Salt and pepper, to taste

2 cups cooked jasmine or basmati rice

2 cups steamed broccoli florets (or your favorite vegetable)

¼ cup fresh parsley, chopped (for garnish)

1 tablespoon soy sauce (optional)

Lemon wedges (for serving)

Instructions

Prepare the Chicken: Begin by patting the chicken pieces dry with paper towels to ensure a good sear. Season the chicken with salt, pepper, smoked paprika, onion powder, and dried thyme. Toss the chicken pieces until they are evenly coated in the spice mix.

Make the Garlic Butter: Heat a large skillet over medium-high heat and add 2 tablespoons of the unsalted butter. Once the butter has melted, introduce the minced garlic to the skillet. Sauté for about 30 seconds, stirring frequently until the garlic is fragrant and golden, but be cautious not to let it burn.

Cook the Chicken: Carefully add the seasoned chicken pieces to the skillet. Allow them to cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). For added flavor, you can drizzle the soy sauce over the chicken in the last minute of cooking and mix well.

Combine and Add More Butter: Once the chicken is fully cooked, lower the heat to low. Add the remaining 2 tablespoons of butter to the skillet. Stir the chicken gently to coat it in the melted garlic butter until everything is glossy and well-combined.

Assemble the Bowls: To serve, spoon a generous portion of the cooked rice into each bowl. Top the rice with the garlic butter chicken, and arrange steamed broccoli or your chosen vegetables artistically alongside.

Garnish and Serve: Finish by sprinkling a fresh handful of chopped parsley over the bowls for a burst of color and flavor. Serve with lemon wedges on the side, allowing diners to squeeze fresh juice for an extra zesty touch.

Enjoy your flavorful Garlic Butter Chicken Rice Bowls!
