1 lb (450g) large shrimp, peeled and deveined

3 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1/4 cup unsalted butter

2 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Zest and juice of 1 lemon

Salt and pepper, to taste

1/4 cup freshly grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Shrimp: In a medium bowl, season the peeled and deveined shrimp with salt, pepper, and half of the lemon juice. Gently toss them to ensure they’re well coated, then set aside to marinate for approximately 10 minutes.

    Cook the Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil is shimmering, carefully add the marinated shrimp to the skillet. Cook for about 2-3 minutes on each side until the shrimp turn a vibrant pink color and become opaque. Once cooked, transfer the shrimp to a plate and set aside.

      Sauté the Garlic: In the same skillet, lower the heat slightly and add the remaining tablespoon of olive oil along with the unsalted butter. Once the butter has melted and is bubbling, add the minced garlic and red pepper flakes. Sauté for around 1 minute, stirring constantly to avoid browning the garlic, until it releases a fragrant aroma.

        Incorporate Zucchini Noodles: Add the spiralized zucchini noodles to the skillet and toss them gently in the garlic butter mixture. Allow the noodles to cook for about 2-3 minutes, just until they are tender but still retain a slight crunch.
