Ingredients

2 cups cooked jasmine rice

2 boneless, skinless chicken breasts

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

¼ cup fresh parsley, chopped

Juice of 1 lemon

Optional: Crumbled feta cheese for topping

Instructions

Marinate the Chicken:

    - In a mixing bowl, blend together the minced garlic, olive oil, dried oregano, thyme, paprika, along with a generous pinch of salt and freshly ground black pepper. Stir well to create a fragrant marinade.

      - Add the chicken breasts to the bowl, ensuring they are thoroughly coated in the marinade. Cover the bowl with plastic wrap and let it marinate for at least 30 minutes at room temperature, or for up to 2 hours in the refrigerator for deeper flavor.

        Cook the Chicken:

          - Heat a large skillet over medium-high heat. Once hot, add the marinated chicken breasts to the skillet. Cook for approximately 6-7 minutes on each side, or until the chicken is golden brown and the internal temperature reaches 165°F (75°C). Once cooked, transfer the chicken to a plate and allow it to rest for a few minutes before slicing it into thin strips.

            Sauté the Vegetables:

              - In the same skillet, add the halved cherry tomatoes and chopped spinach. Sauté over medium heat for about 2-3 minutes, stirring occasionally, until the spinach is wilted and the tomatoes are just softening. Season the sautéed vegetables lightly with salt and freshly ground black pepper to taste.

                Assemble the Rice Bowls:

                  - To serve, scoop the cooked jasmine rice into individual bowls. Arrange the sliced chicken on top of the rice, followed by a generous portion of the sautéed cherry tomatoes and spinach.

                    - Drizzle the fresh lemon juice over each bowl and sprinkle chopped parsley on top for added freshness. If desired, finish with a scattering of crumbled feta cheese for a salty, creamy contrast.

                      Enjoy:

                        - Before enjoying your meal, mix all the ingredients in the bowl to combine the flavors. Serve warm and savor your delightful Garlic Herb Chicken Rice Bowls!
