Ingredients

1 pound ground turkey

1 cup uncooked long-grain rice

2 cups chicken broth (low sodium preferred)

1 tablespoon olive oil

4 cloves of garlic, minced

1 medium onion, diced

1 bell pepper, diced (any color, choose your favorite)

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

2 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges, for serving

Instructions

Sauté the Aromatics: In a large, deep skillet or frying pan, heat the olive oil over medium heat. Once the oil is shimmering, add the diced onion and bell pepper. Sauté for about 5 minutes until they are softened and the onion becomes translucent. Next, stir in the minced garlic and cook for an additional minute, stirring frequently, until it becomes fragrant.

Cook the Turkey: Increase the heat slightly to medium-high, and add the ground turkey to the skillet. Use a spatula to break the turkey into small pieces. Cook for approximately 6-8 minutes, stirring regularly, until the turkey is browned and perfectly cooked through (the meat should no longer be pink). Season the mixture with salt, pepper, dried thyme, rosemary, and oregano, stirring to evenly distribute the spices.

Add Rice and Broth: Stir the uncooked rice into the turkey mixture, ensuring it's thoroughly mixed in. Pour the chicken broth over the rice, and bring the combination to a boil. Once it reaches a vigorous boil, reduce the heat to low, cover the skillet with a lid, and let it simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.

Incorporate Vegetables: Once the rice is cooked and has reached the desired texture, gently fold in the chopped spinach and halved cherry tomatoes. Continue to cook for an additional 2-3 minutes, until the spinach has wilted and the tomatoes have softened slightly.

Garnish and Serve: Remove the skillet from the heat and sprinkle the dish with fresh parsley for a burst of color and flavor. Serve hot with lemon wedges on the side, allowing everyone to squeeze fresh lemon juice over their portion for a zesty finish.

              - Presentation Tips: For an attractive presentation, serve the skillet dish in a large bowl and allow guests to help themselves. Garnish with a sprinkle of extra parsley and arrange the lemon wedges artistically around the bowl. This adds color and encourages diners to enhance their dishes with a squeeze of lemon!
