2 cups rotini or fusilli pasta

1 pound boneless, skinless chicken breasts

1 tablespoon extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1/2 medium red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/2 cup balsamic vinaigrette dressing (store-bought or homemade)

Juice of 1 fresh lemon

Instructions
 

Cook the Pasta: Fill a large pot with water and add a generous amount of salt. Bring the water to a rolling boil. Add the rotini or fusilli pasta and cook according to the package instructions until al dente, which typically takes about 8-10 minutes. Once cooked, drain the pasta in a colander and rinse it under cold water to stop the cooking process. Set aside to cool.

    Prepare the Chicken: While the pasta cooks, preheat your grill to medium-high heat (around 375°F to 400°F). Using paper towels, pat the chicken breasts dry to remove excess moisture. Brush both sides of the chicken breasts with the extra virgin olive oil, then season them evenly with garlic powder, dried oregano, salt, and freshly ground black pepper.

      Grill the Chicken: Once the grill is hot, place the seasoned chicken on the grates. Grill for about 6-7 minutes on each side or until the internal temperature is reached at 165°F (75°C).
