Grilled Corn & Avocado Salad

4 ears of fresh sweet corn, husked

2 ripe avocados, diced into bite-sized pieces

1 cup cherry tomatoes, halved

½ medium red onion, finely chopped

1 jalapeño, seeded and diced (optional for heat)

¼ cup fresh cilantro, chopped

Juice of 2 limes (freshly squeezed for the best flavor)

3 tablespoons extra-virgin olive oil

Salt and freshly ground black pepper to taste

½ teaspoon smoked paprika (optional for a smoky kick)

Feta cheese or cotija cheese, crumbled for garnish (optional)

Instructions
 

Start by preheating your grill to a medium-high heat to prepare for the corn.

    Once heated, place the husked corn directly onto the grill grates. Grill the corn for about 10-15 minutes, making sure to turn it occasionally for an even char and tenderness. You’ll know it’s ready when it has beautiful grill marks and is tender to the bite. Remove the corn from the grill and set it aside to cool.

      After the corn has cooled enough to handle, use a sharp knife to carefully cut the kernels off the cob. Transfer the freshly cut kernels to a large mixing bowl.

        In the mixing bowl, add the diced avocados, halved cherry tomatoes, finely chopped red onion, diced jalapeño (if you prefer some spice), and the chopped cilantro.

          In a separate small bowl, whisk together the freshly squeezed lime juice, extra-virgin olive oil, smoked paprika, and salt and pepper. This will be your zesty dressing. Once combined, pour it over the salad mixture in the large bowl.

            Gently toss all the ingredients together until they are well combined and the avocado pieces are evenly coated in the dressing. Be careful not to mash the avocado!

              Taste the salad and adjust the seasoning if necessary. If you want more zing, feel free to add extra lime juice, salt, or pepper based on your preference.

                For serving, arrange the salad in bowls or on a large platter. If desired, sprinkle crumbled feta or cotija cheese on top for an extra layer of flavor and texture. Enjoy your refreshing grilled corn and avocado salad!
