2 medium eggplants, sliced into 1/4-inch thick rounds

3 tablespoons olive oil, divided

Salt and pepper, to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1/4 cup sun-dried tomatoes, chopped

4 large whole wheat or spinach wraps

1/2 cup hummus

Fresh arugula or spinach, for garnish (optional)

Instructions
 

Prepare the Eggplants: Place the sliced eggplants in a colander, generously sprinkle them with salt, and let them rest for about 20 minutes. This process draws out excess moisture and bitterness. After 20 minutes, rinse the eggplant slices under cold water and thoroughly pat them dry with paper towels.

    Season the Eggplant: In a large mixing bowl, combine 2 tablespoons of olive oil, smoked paprika, garlic powder, along with salt and pepper to taste. Add the dried eggplant slices into the bowl and toss gently until they are evenly coated in the seasoning mixture.

      Grill the Eggplant: Heat your grill or grill pan to medium-high. Once hot, place the seasoned eggplant slices on the grill. Cook for approximately 3-4 minutes on each side, or until grill marks form and the slices are tender. Once grilled, remove from heat and set aside.

        Assemble the Wraps: Take one wrap and lay it flat on a clean surface. Spread about 2 tablespoons of hummus evenly over the entire surface of the wrap. Next, arrange a layer of the grilled eggplant slices on top of the hummus.
