1 cup green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 medium carrot, diced

1 medium bell pepper, diced (preferably red or yellow for added sweetness)

2 cups Hatch green chilies, roasted, peeled, and diced (adjust according to your heat preference)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon chili powder (optional, for those who enjoy extra heat)

1 can (14.5 ounces) diced tomatoes, with juice

6 cups vegetable broth

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, for garnish

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and carrot. Sauté them for about 4-5 minutes, or until the onion turns translucent. Then, add the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until they release a fragrant aroma.

    Incorporate the Spices: Sprinkle in the ground cumin, smoked paprika, dried oregano, and optional chili powder. Stir well to ensure the vegetables are evenly coated with the spices. Cook for 1-2 minutes to allow the spices to bloom and intensify in flavor.

      Mix in the Lentils and Chilies: Add the rinsed lentils, diced Hatch chilies, and the can of diced tomatoes (including their juice) to the pot. Stir everything together until it is well combined.
