1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

8 corn tortillas

1 cup crumbled queso fresco or shredded cheese (choose between cheddar or Monterey jack)

1/4 cup fresh cilantro, chopped

1 avocado, sliced thinly (for topping)

Heat the Oil: In a large skillet, add the olive oil and heat it over medium heat until shimmering.

    Sauté Onion and Garlic: Add the diced onion to the skillet. Sauté for about 3-4 minutes, or until the onions are translucent and soft. Next, add the minced garlic and sauté for an additional minute until it's fragrant and golden.

      Add Chicken and Spices: Stir in the shredded chicken and the roasted Hatch green chiles. Sprinkle in the cumin, smoked paprika, chili powder, salt, and black pepper. Mix everything together well, ensuring the chicken is evenly coated with the spices. Cook for about 5–7 minutes, until everything is heated through.

        Warm the Tortillas: In a separate medium skillet, warm the corn tortillas one at a time over medium heat for about 30 seconds on each side until they are pliable. Alternatively, you can wrap the tortillas in aluminum foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes.
