Ingredients

2 ripe bananas, thoroughly mashed

1 ½ cups rolled oats

½ cup almond butter (or your preferred nut butter)

¼ cup honey or maple syrup

1 teaspoon pure vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup chopped nuts (such as walnuts, almonds, or pecans)

½ cup dried fruit (like raisins, cranberries, or chopped dates)

¼ cup dark chocolate chips (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a baking dish (approximately 9x9 inches) by greasing it lightly or lining it with parchment paper for easy removal after baking.

Mix the Wet Ingredients: In a large mixing bowl, combine the thoroughly mashed bananas with the almond butter, honey or maple syrup, and vanilla extract. Stir vigorously until the mixture is smooth and all the ingredients are well blended.

Incorporate the Dry Ingredients: Add the rolled oats, ground cinnamon, and salt into the banana mixture. Mix everything together until the ingredients are evenly distributed and no dry spots remain.

Fold in Additional Ingredients: Gently fold in your choice of chopped nuts, dried fruit, and dark chocolate chips (if using). Ensure that all additions are well combined within the batter.

Spread the Mixture: Transfer the mixture to your prepared baking dish. Use a spatula to evenly spread it out and press down firmly to help the bars maintain their shape during baking.

Bake: Place the baking dish in the preheated oven and bake for approximately 25-30 minutes. You’ll know they are ready when the top is lightly golden and the mixture feels set.

Cool and Cut: After baking, remove the dish from the oven and let it cool for about 10 minutes. Then, carefully lift the bars out of the dish using the edges of the parchment paper (if lined) and transfer to a wire rack to cool completely. Once fully cooled, cut into bars or squares as desired.

Store: Enjoy your nutritious banana oat energy bars as a wholesome snack or breakfast option. Store any leftovers in an airtight container at room temperature for up to a week, or freeze them for longer freshness.
