1 pound boneless, skinless chicken breast, thinly sliced

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch piece of fresh ginger, grated

2 cups assorted bell peppers (red, yellow, green), sliced into strips

1 cup broccoli florets, cut into bite-sized pieces

1 cup sugar snap peas, trimmed

1/4 cup honey

1/4 cup low-sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons water

1 teaspoon sesame oil

Salt and pepper to taste

Sesame seeds and sliced green onions for garnish

Cooked rice or quinoa for serving

Prepare the Sauce: In a small bowl, combine the honey, soy sauce, rice vinegar, sesame oil, cornstarch, and water. Whisk until smooth and fully incorporated, then set the mixture aside for later use.

    Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the sliced chicken to the pan. Season it with salt and pepper. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Once ready, remove the chicken from the skillet and place it on a plate; set aside.

      Sauté the Vegetables: In the same skillet, add a splash more oil if necessary. Add the minced garlic and grated ginger and stir-fry for about 30 seconds until they become fragrant. Then, toss in the sliced bell peppers, broccoli florets, and sugar snap peas. Continue to stir-fry for 3-5 minutes, ensuring the vegetables remain crisp-tender.

        Combine Chicken and Sauce: Return the previously cooked chicken to the skillet with the vegetables. Pour the prepared honey garlic sauce over the mixture. Stir everything together to ensure all ingredients are well coated with the sauce. Cook for an additional 2-3 minutes until the sauce has thickened and everything is heated through.
