Lemon Garlic Shrimp Zoodle Scampi

1 pound large shrimp, peeled and deveined

4 medium zucchinis, spiralized into zoodles

4 tablespoons unsalted butter, divided

4 tablespoons olive oil, divided

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional for heat)

1 cup cherry tomatoes, halved

Juice and zest of 1 large lemon

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Prepare the Zoodles: Using a spiralizer, convert the zucchinis into zoodles. Once ready, spread them out on a clean kitchen towel to absorb any excess moisture while you prepare the shrimp.

    Cook the Shrimp: In a large skillet set over medium heat, melt 2 tablespoons of unsalted butter and 2 tablespoons of olive oil together. Once the mixture reaches a shimmering state, add the shrimp in a single layer. Season lightly with salt and pepper. Cook for approximately 2-3 minutes until the shrimp turn pink on one side, then carefully flip and cook for an additional 2 minutes. Once cooked through, remove the shrimp from the skillet and set aside on a plate.

      Sauté Garlic: In the same skillet, add the remaining 2 tablespoons of butter and 2 tablespoons of olive oil. Allow the butter to melt completely, then add the minced garlic and optional red pepper flakes. Sauté for about 1 minute, stirring frequently, until the garlic becomes fragrant but be vigilant to prevent burning.

        Add Tomatoes and Zoodles: Incorporate the halved cherry tomatoes into the skillet and sauté for an additional 2-3 minutes, allowing them to soften slightly. Next, add the spiralized zucchinis to the pan, tossing everything together. Cook for an additional 2-3 minutes, just until the zoodles become tender yet retain a bit of crispness.

          Combine Ingredients: Return the cooked shrimp back into the skillet. Pour in the lemon juice and sprinkle over the zest. Gently toss everything together to combine and heat through for about 1 minute.

            Serve: Remove the skillet from the heat and transfer the delicious mixture onto serving plates. Garnish with a generous sprinkle of freshly chopped parsley and, if desired, finish with grated Parmesan cheese. Serve warm and enjoy your delightful zoodle scampi!
