1 lb (450g) chicken breast, diced into bite-sized pieces

1 cup couscous

1 1/4 cups low-sodium chicken broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 medium zucchini, diced

1 cup fresh spinach, roughly chopped

1 lemon (zest and juice)

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp red pepper flakes (optional, adjust for heat level)

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped, for garnish

Prepare the Couscous: In a medium saucepan, bring the chicken broth to a boil. Once boiling, stir in the couscous. Cover the saucepan with a lid, remove it from heat, and let it sit for 5 minutes. Afterward, fluff the couscous with a fork to separate the grains and set aside.
