Ingredients

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons cornstarch

2 tablespoons olive oil

1/4 cup fresh lime juice (approximately 2 limes)

1 tablespoon honey or agave syrup

1 tablespoon soy sauce

1 teaspoon sesame oil

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

4 cups mixed salad greens (such as spinach, arugula, and kale)

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1 avocado, diced

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Crushed peanuts or sesame seeds for garnish

Instructions

Prepare the Tofu:

Begin by cutting the pressed tofu into bite-sized cubes. In a mixing bowl, add the cubed tofu and sprinkle the cornstarch over it. Gently toss until each tofu piece is evenly coated with cornstarch. This step is crucial for achieving a crispy texture during cooking.

      Cook the Tofu:

Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the cornstarch-coated tofu cubes to the skillet. Cook the tofu for about 10-15 minutes, flipping the pieces occasionally using a spatula, until they are golden brown and crispy on all sides. Once cooked, transfer the tofu to a plate and allow it to cool slightly.

          Make the Dressing:

In a small mixing bowl, combine the fresh lime juice, honey (or agave syrup), soy sauce, sesame oil, garlic powder, salt, and black pepper. Whisk together until all the ingredients are well integrated and a smooth dressing forms.

              Assemble the Salad:

In a large salad bowl, create a base layer of the mixed salad greens. Next, arrange the halved cherry tomatoes, thinly sliced cucumber, diced avocado, red onion, and finally the crispy tofu on top of the greens.

                  Dress the Salad:

Generously drizzle the prepared lime dressing over the salad. Use salad tongs or two forks to gently toss the ingredients together, ensuring that every component is coated with the tangy dressing.

                      Garnish and Serve:

Finish the salad by sprinkling fresh, chopped cilantro over the top and adding a final touch with crushed peanuts or sesame seeds for added texture and crunch. Serve the salad immediately for the freshest flavors.
