Mango Coconut Chia Popsicles

2 ripe mangoes, peeled and diced

1 cup full-fat coconut milk (for optimal creaminess)

1/4 cup honey or maple syrup (adjust according to your sweetness preference)

1/4 cup chia seeds

1 teaspoon pure vanilla extract

A pinch of salt

Fresh mint leaves (for optional garnish)

Instructions
 

Blend the Mango Mixture: Begin by placing the diced mangoes, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt into a blender. Blend on high speed until the mixture reaches a smooth and creamy consistency. Once blended, taste the mixture and add more honey or syrup if you prefer a sweeter flavor.

    Incorporate Chia Seeds: Transfer the blended mango mixture into a mixing bowl. Gradually stir in the chia seeds, ensuring they are evenly distributed throughout the mixture. Allow this mixture to sit for about 10 minutes, stirring occasionally to keep the chia seeds from sticking together.

      Prepare Popsicle Molds: While the chia pudding mixture is thickening, prepare your popsicle molds. If your molds require wooden sticks, place the sticks into the center of each mold at this stage.

        Fill the Molds: Carefully pour the mango-coconut-chia mixture into each popsicle mold, leaving a small space at the top of each mold to allow for expansion as they freeze.

          Insert Sticks and Freeze: Place the popsicle molds in the freezer. If you are using molds without built-in sticks, insert the sticks halfway into the mixture after about 1-2 hours, once the popsicles have started to set. Freeze for a minimum of 4-6 hours or until they are completely solid.

            Unmold and Serve: To release the popsicles from their molds, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out. Serve immediately and enhance the presentation by garnishing with fresh mint leaves if desired.
