Ingredients

1 lb Brussels sprouts, trimmed and halved

4 strips of thick-cut bacon, chopped into small pieces

1/4 cup pure maple syrup

2 tablespoons extra-virgin olive oil

1 teaspoon Dijon mustard

1/2 teaspoon freshly ground black pepper

1/2 teaspoon coarse sea salt

1/4 teaspoon red pepper flakes (optional for a spicy kick)

2 tablespoons toasted pecans, roughly chopped (for garnish)

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). This will ensure it’s at the right temperature for roasting the Brussels sprouts.

Prepare the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until the pieces are crispy and golden brown, about 5-7 minutes. Once cooked, use a slotted spoon to transfer the bacon to a paper towel-lined plate to absorb excess grease. Be sure to leave about 1 tablespoon of the rendered bacon fat in the skillet for sautéing.

Sauté the Brussels Sprouts: In the same skillet containing the reserved bacon grease, add the halved Brussels sprouts cut side down. Sauté for 5-7 minutes, stirring occasionally, until the sprouts are beautifully caramelized and tender.

Make the Maple Glaze: In a small mixing bowl, combine the pure maple syrup, extra-virgin olive oil, Dijon mustard, black pepper, sea salt, and red pepper flakes (if using). Whisk together until the mixture is smooth and well combined.

Combine Ingredients: Once the Brussels sprouts are caramelized, return the crispy bacon to the skillet. Pour the maple glaze over the Brussels sprouts and bacon, tossing everything until the sprouts are evenly coated with the mixture.

Roast in the Oven: Spread the Brussels sprout mixture in an even layer on a large baking sheet lined with parchment paper. Roast in the preheated oven for 15-20 minutes, stirring halfway through, until the sprouts are caramelized and crispy on the edges.

Garnish and Serve: After roasting, remove the baking sheet from the oven and transfer the Brussels sprouts and bacon to a serving dish. For a delightful crunch and flavor contrast, sprinkle the toasted pecans and fresh parsley over the top. Serve warm and enjoy every bite of your Maple Bacon Brussels Sprouts Delight!
