2 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon granulated sugar

1 cup unsalted butter, chilled and cubed

6-8 tablespoons ice water

4 medium-sized apples (either Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup packed brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon fresh lemon juice

1 tablespoon cornstarch

1 egg, beaten (for egg wash)

Extra granulated sugar for sprinkling on top

Instructions
 

Prepare the Pie Crust:

      - Gradually add the ice water, one tablespoon at a time, mixing gently with a fork after each addition. Continue until the dough holds together without being sticky. Divide the dough into two equal portions, shape each portion into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour to chill.

        Make the Apple Filling:

          - In a large bowl, toss together the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until the apples are evenly coated. Let the mixture sit for about 10 minutes to allow the flavors to meld and the apples to release some juices.

            Preheat the Oven:

              - Preheat your oven to 375°F (190°C) so it’s hot and ready for baking.

                Roll Out the Dough:

                  - On a lightly floured surface, roll out one disk of chilled dough to approximately 1/8 inch thick. Use a round cutter (about 4-5 inches in diameter) to cut out circles. Gather any scraps, re-roll, and cut additional circles until you have about 12.
