1 cup cooked and shredded chicken (rotisserie chicken is ideal)

1 ripe avocado, well-mashed

1/2 cup shredded cheese (cheddar or a Mexican blend)

1/4 cup finely diced red onion

1/4 cup chopped fresh cilantro

1 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and pepper to taste

10-12 egg roll wrappers

Oil for deep frying, or cooking spray for baking

Sweet chili sauce or ponzu sauce for dipping (optional)

Instructions
 

Prepare the Filling: In a medium mixing bowl, combine the shredded chicken, mashed avocado, shredded cheese, diced red onion, chopped cilantro, garlic powder, ground cumin, and salt and pepper. Stir the mixture thoroughly until all ingredients are evenly mixed and coated.

    Assemble the Egg Rolls: Take an egg roll wrapper and lay it flat on a clean surface, so it forms a diamond shape with one point facing you. Place approximately 2 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom point of the wrapper over the filling, tucking it in slightly. Then fold in the two side points inward, and roll the wrapper tightly away from you to enclose the filling. Seal the top point by applying a small amount of water to it. Repeat this process with the remaining wrappers and filling until complete.

      Cook the Egg Rolls:

        - For Deep Frying: Heat oil in a deep skillet or pot to 350°F (175°C). Carefully add the egg rolls in batches, frying them for about 3-4 minutes or until they are golden brown and crispy, turning them occasionally for even cooking. Once cooked, remove them from the oil and place on a plate lined with paper towels to drain excess oil.

          - For Baking: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place the egg rolls on it. Lightly spray or brush the tops with cooking oil. Bake for 15-20 minutes, flipping them halfway through, until they are golden and crispy.
